Ramblings

Gloomy skies abound today. I heard back from Speech Pathology Australia about my application and they still want more information from me. Shrugs. It will happen; when, I am unsure, but I know they will approve my credentials one day.

Meanwhile…I love being home on a dreary day; makes staying at home much cozier. Feel like curling up to a book and a hot cup of chai tea. But first, I need to make a quick run to the market to pick up some tomates for Bryan to make salsa.

I just realized that next week this time, a new president of the U.S. will probably be revealed. I’m pretty sure there will be no surprises and am actually feeling happy with the choices the people have appeared to make. It will be weirdly cool. And coolly weird. But I guess, it will be more exciting than anything else.

To end on a totally irrelevant note: would you pay more attention to the lecture if your professor turned up to class looking like this??

Pumpkin spice cookies

I got lazy and made pumpkin spice cookies instead of a cake coz the cookie recipe looked much easier. Not a big fan of glaze, I left out that part of the mix. Only little snitch: our oven sucks; it’s a top heating only oven so I had to overturn the cookies and bake the underside again which was more of a pain in the neck than anything else. The taste n consistency weren’t compromised so I was rather satisfied with them…as were my husband and some friends we had over for dinner last night!

Hey, pumpkin

Not wanting to pay for ridiculously overpriced Halloween pumpkins going for $6/kg at the Queen Victoria Market, I decided to, instead, buy a Japanese pumpkin (only $1/kg) and put it to some kind of use. It might be quite a waste to carve this pumpkin typically used for cooking, so I am going to try making this delicious sounding pumpkin spice recipe from my favorite baking site, http://www.joyofbaking.com.

I just baked half the pumpkin and pureed it. It smells and tastes heavenly! Can’t wait to use it in the cake!

Baked squash reminds me soo much of the fun fall times I had in San Diego with ex-roomies who made squash dishes, and those lovely memories just triggered a flood of other fun times I had with all the amazing people I’m friends with in SoCal. Here’s a shoutout to all you dear friends out in beautiful SoCal: HAPPY HALLOWEEN, Y’ALL!! You don’t know how much I want to be with you guys especially during fall with all the fun festivities comin’ up!

Around the apartment

In the spirit of Halloween and recreating a somewhat fall-ish/North American tradition (because I <3 it so much!), I started decorating the apartment with Halloween-ish stuff. One of the things I did was put up the word “Boo!” on my window:
